I'd say the skin could have been crispier, but the long roasting time made the whole duck dry even when I got dad to seal the cavity up. The glaze is a really nice mix and that I might keep. Now to find a way to get that crispy skin in a short roasting time....

Was contemplating this year's Christmas dinner menu and thought that we could perhaps make duck. The roasted meats usually the dishes we change every year, and since dad has been trying out some roasted duck, I thought I could try another recipe and perhaps we might come up with something good. I found this recipe for crispy duck and thought it looked good, and decided to give it a go.
