My sister has been saving old bananas in the freezer and when questioned, she mentioned that they are still good for making banana bread or muffins. I got bored again and decided that I might try to make a banana bread she could enjoy. So I looked in my current favourite carb-free recipe blog, Comfy Belly, and found good, and really easy, recipe.
Other than chopping up the nuts and adding it in the batter, I just made a later on top, but I did put chocolate chips in it still. Banana, chocolate and walnuts just go so good together! Anyway, baked it and it was perfect - until I tried taking it out of the pan. Seems like I didn't put enough oil at the base and it got stuck and broke in half as it dropped out. Anyway, it tasted good, and that's the most important thing. The only thing better is to pan-fry a slice with a little salted butter....
