I bought some long beans and mango yesterday thinking I would make a green mango salad for my sister's lunch. I'm not sure how the mango got so ripe so quickly but it was too soft for the intended salad and I had to change it up a little. Also, dad was using up all the prawns I had been buying and I was left with almost no protein to add to the salad.
Good thing I fond some frozen scallops while digging through the freezer and found some button mushrooms in the vegetable drawer. The mango ended up as part of the dressing, along with birds eye chillies, onions, fish sauce and a little palm sugar. And along with the long beans, everything was just tossed together and I had a really tasty midnight snack.
