Was at an Asian store today and got some inspiration from the lovely fresh herbs they were selling to make todays dinner. It was actually a good opportunity to use up some good leftovers we had sitting in the fridge. Dad made some Assam Pedas Stingray and had about half the batch left. I decided we could just make a simple Assam Laksa using the meat and gravy by just adding a few more ingredients. We got some fresh mint, sliced up some cucumber and birds eye chillies and blanched some rice noodles. I got dad to peel the stingray meat off the cartilage and added a little more water to the thick gravy to lighten it. Then put all the stuff in a bowl, added a dollop of prawn paste (Hei Ko), and had a really good meal.
