I was looking through Pinterest on Sunday for some ideas and it was such coincidence that Simon (my sister's ex colleague and really good friend) pinned a recipe for Baked Gnocchi with Bacon, Tomato & Mozzarella. I happen to have a pack of gnocchi and was actually planning to make something with it this week, and the recipe just pushed me to make the dish and try it out as soon as possible.
The recipe was relatively easy, and I was lucky enough to actually have all the required ingredients in the fridge. After about an hour, the dish was all put together and baked. The bacon gave a salty and smokey flavour that complimented the sweet and tart flavours from the tomatoes. I added a bit more vegetables from the leftover pasta we made earlier, and that added a little more sweetness to the dish. The gnocchi was quite light and fluffy, and I think making it in individual bowls with a bit more cheese and browning it more on top would be really great.
