Another low-carb to no-carb lunch for my sis and today it was inspired by a Nicoise salad. It is one of the salads I like but there are so many variations, so this could be my own variation. There was some stuffed olives and peppers, and marinated sardines on hand. So I was just left with cooking some eggs for a little more protein and putting everything together. I didn't really bother with a dressing either as the flavoured oils from the marinated ingredients were just perfect with a squeeze of lemon juice and some pepper. Probably going to make a batch for my lunch!
