I've been wanting to try something I saw on some Taiwanese show about interesting food from some other country. I can't really understand half the things the host and guest were saying, but I saw a dish that caught my eye and interest. It was lotus root stuffed with glutinous rice, but what I didn't know was that it was a dessert, or at least the search results on the internet said so. Since glutinous rice isn't the best thing for my diet, and neither is sugar, I decided to try make a savoury version instead.
I started by asking dad what he used in his Lo Mai Fan recipe, and then modified it a little, stuffed the rice in the lotus root as per recipe instructions, then boiled it in soup stock for added flavour. After stuffing 4 sections of lotus root, I still had some rice mixture left. Dad said there was some bamboo leaves in the pantry and I soon ended up with a few rice dumplings.
The end results look quite alright, and it seems testers like the flavour. Guess this is a good test result.
